I’ve heard the satellite phones and Internet can have problems with lag. Has anyone used them first hand?

We use SAT phones for voice communication backups and they are, generally, comparable to cell phones in terms of clarity. Lag has never been an issue for us.
We had some concerns about this in trying to run our PACOM Alarm System over the satellite because of the constant back and forth polling process that the system employs. Well we tested it in early May at Agility in Atlanta and there was no lag and the alarm system ran just like it was hard wired!
